Chili Cheese Toast

There is nothing like a tasty chili cheese toast with a hot cuppa tea to beat those Monday blues. This 10-12 minute green and yellow vegetarian meal is great for a quick and easy weekday dinner. These little nuggets of heaven are also a great appetizer for parties too! And it goes without saying, they taste delicious!!   • Pre-heat your oven and set to broil/grill – I set mine at 550c
  • Place your soft slices of bread in a baking tray
  • Using soft butter, apply to each slice of bread
  • Finely chop your chili cheese topping ingredients (you can use anything you like). I used the following:
    • Green Chilies (Jalapeño Peppers)
    • Scallion (Spring onions)
    • Cilantro (Coriander)
  • In a bowl, mix grated cheese, salt, pepper, chili powder and garlic powder (optional)
  • Spread your finely chopped ingredients onto the bread slices
  • Sprinkle your cheese mix on top
  • For those who like it a little more spicy, sprinkle chili flakes on top
  • Place your baking tray in the oven and broil/grill for 5-7 minutes
  • Take the chili cheese toasts out once the cheese begins to brown
  • Slice your hot chili cheese toast and enjoy with a cuppa tea!!
